HERITAGE CHEESEMAKING

 
MPBDP 01/16/2008 - The Middle Peninsula Business Development Partnership and Rona Sullivan, Sullivan’s Pond Farm in Wake will offer a workshop on Saturday, February 16 from 10 a.m. to 2 p.m. to teach about traditional American farmstead raw milk cheesemaking methods. Rona has researched and perfected these methods over the last 15 years. This is a basic cheesemaking workshop that is equally suitable for home or commercial use. During the cheesemaking portion of the workshop, participants will learn about: clabbering (without the use of cultures or rennet), draining, salting, curd handling and tasting, drying, pressing, rind treatments (affinage) and flavorings, bandaging, beeswaxing, leaf wraps, ashing, aging, and the importance of hygiene and aesthetics. The cost to register for this workshop is $60 and includes all materials. The workshop will be held at Sullivan’s Pond, Mill Creek Road in Wake. Space is limited.
